Cheddar Gorge Cheese Company

Cheddar Gorge Cheese Company

The requirements of a truly authentic Cheddar cheese are:

- It should be made from unpasteurised milk taken from cows grazing in the lush pastures surrounding Cheddar. The pastures influence the milk and the milk determines many of the key characteristics of the cheese

- Made and cheddared by hand using the cheesemaker's skill and experience rather than a mechanised process

- Matured in cloth for up to 18 months to produce a rind and, more importantly, to allow the gradual change in texture of the cheese to take its effect on flavour development. This happens differently in vacuum matured cheese.

Here at The Cheddar Gorge Cheese Company, we continue to make cheese in this way and are alone in keeping the traditional art of Cheddar making alive in the heart of the village of Cheddar. Our cheese has won many prizes and in the last two years has won awards at the British Cheese Awards and the Royal Bath and West Show.

Lye Cross Farm

Lye Cross Farm

Over 100 years ago the Alvis family began farming the land 7 miles from Cheddar in the tranquil Somerset Vale of Wrington. Lye Cross Farm is the home of Alvis Bros Ltd, one of the finest West Country cheesemakers.

The Alvis family have been dedicated to making the highest quality cheddar on the family farm since 1952. Inspiring a fourth generation of cheese makers, brothers Peter and Johnny Alvis continue to make award winning cheddar cheese, handmade the traditional way using milk from local herds.

Farming responsibly and with a continual re-investment in infrastructure the family has created a successful business with minimal carbon footprint able to serve the local community and markets further afield.

“We hope you enjoy the smooth and creamy texture of our cheddar cheese as much as we have enjoyed making it.”

The Wine Tasting Co - Winscombe

The Wine Tasting Co - Winscombe

The love of wine came from a travelling trip to New Zealand, upon my return to the UK I took the plunge and moved to London to follow this new found love. I gained employment with a London-based international wine company and gained my advanced qualification and now also hold the Diploma with the Wine and Spirit Education Trust (WSET).

Returning to the West Country I worked part time for a independent wine merchant while setting up the Wine Tasting Co in 2009. It was a natural progression to open a Wine Shop to have a base to share the love of wine. I love getting people exploring grapes, countries and different styles of wine, its a tasty subject to get involved in and enjoy!
